Mandarins are some of the sweetest fruits of the orange family and they are thriving in the sunshine in the organic fruit orchard at The Farm at Hōkūala. These easy to peel, almost seedless and ultra-juicy citrus fruits are the inspiration behind Hualani’s latest freshly squeezed cocktail creation… the Mandarin Gin Fizz!

Fizz is a cocktail category that includes a spirit with citrus, sugar, and sparkling water. The main ingredients of a classic Gin Fizz include gin, lemon juice, sugar, and egg white. For a delicious farm-to-bar twist with a nutritious dose of vitamin C, the juice of a whole mandarin is added to celebrate The Farm’s latest harvest. Combine the ingredients in a cocktail shaker, give it a vigorous dry-shake (no ice) followed by a wet-shake (with ice) and strain the contents into a glass tumbler. Adding a dash of effervescence results in a gorgeous layer of foam for the topping. Spear a segment of mandarin for a vibrant garnish with a tantalizing citrus aroma that hints to the signature flavor of this frothy delight!


1.5oz Bombay Sapphire Gin
1oz Egg white
.5oz Simple syrup
Sparkling water (soda) to top
Fresh from the Farm at Hōkūala
1 Mandarin
.75oz Lime juice


Cut the mandarin in half and squeeze juice into cocktail shaker with gin. Add egg white, simple syrup, and lime juice. Cover and dry-shake thoroughly to mix. Add a scoop of ice and wet-shake. Strain into a glass and top off with sparking water or soda for foam topping. Garnish with a segment of mandarin.
