The Farm at Hōkūala and Hualani’s have built upon their existing partnership by offering guests a 4-course pre-fixe farm-to-table menu every Tuesday night. Created weekly, the menu is entirely based on what is fresh and in season. Our Farm-to-Table Tuesday night dinner is an authentic culinary experience inspired by a sense of place, and driven by local suppliers and fresh-picked ingredients from the farm.
The calming ambiance, service with aloha, and sprawling ocean and mountain views make this a once-in-a-lifetime (or once-a-week!) experience.
MEET THE MENU
Although the menus change weekly, the courses and level of quality are consistently fresh. We invite you to take a look at this sample menu (a vegetarian Farm-to-Table menu is also available each week).
‘Ekahi – 1st course: The first course will consist of a light appetizer or pūpū. Some recent dishes include:
Ti Leaf Steamed Onaga
Aloha shoyu, cilantro, and hot oil

Toasted mac nuts, focaccia and Kunana Farm chevre
Nishiki Toro Tartar
Champagne vinegar, capers and radish sprouts
‘Elua – 2nd course: The second course is oftentimes a palette-cleansing locally-sourced soup or light fish dish.
Tomato Bisque
Kaua‘i tomatoes, aged cheddar toast
Butter Poached Lobster
Pumpkin puree, coconut, Thai curry
Moringa Soup
Chicken broth, bamboo shoots, tare
‘Ekolu – 3rd course: The third course will often feature an option of two entrees – land or sea. Below are some recently featured farm-to-table entree options.

As you may have learned in our previous blog about The Farm at Hōkūala, Hualani’s and the farm have a special cyclical relationship where the farm provides seasonal produce for a weekly farm-to-table menu (often including small edible florals), and then kitchen scraps are returned to the farm for composting. It’s so important to us at Timbers to respect and replenish the ʻāina. After all, it is what makes our delicious and memorable evenings at Hualani’s possible!
