Liliko'i Mule

The Farm at Hōkūala features a stunning medley of organic greens, vegetables, tropical fruits and edible flowers, and provides Hualani’s with an abundance of fresh ingredients. Among the most cocktail-friendly of The Farm’s latest harvest is liliko‘i, otherwise known as passion fruit. The vined fruit was introduced to the islands in the 1880s, brought over by Polynesian voyagers along with other canoe crops that have thrived here. The Farm has both the purple and yellow variety of lilikoʻi, and the signature sweet and tarty flavor of the fruit makes for some beautiful cocktails.

Another key ingredient in the delicious Lilikoʻi Mule is the fresh mint grown at The Farm. Mint thrives here on the islands. Anyone who has grown mint at home knows that the conditions clearly encourage growth, as mint tends to take over in the herb garden! Of the 59 mint species, all but two are found in Hawaiʻi. Peppermint, spearmint, orange mint or chocolate mint are just a few of the common options you can use when preparing this drink. The muddling of the mint releases the Menthol oil found in the mint leaves and adds both aroma and flavor.

INGREDIENTS

Tito’s Vodka – 2 oz
Ginger Beer – 2 oz
Simple syrup – 1 oz
Fresh from the Farm at Hōkūala
Lilikoʻi – 1 each
Lime juice – 1 oz
Mint – 5 to 7 leaves

METHOD:

Cut the lilikoʻi in half and scoop out the pulp with the seeds into a mixing cup. Add the mint leaves and muddle the leaves and lilikoʻi. Add vodka, simple syrup, lime juice and a scoop of ice. Cover and shake thoroughly to mix. Pour into a glass and top off with ginger beer. Garnish with a sprig of mint and/or a lime wedge.
