At a recent Ha‘aheo O Kaua‘i Wine Dinner – part of the popular dinner series hosted by Timbers Kaua‘i and a selection of esteemed wineries from around the world – Chef Alex’s signature fresh approach took center stage with Farm Mango Chutney, served alongside a beautifully baked Brie. Sweet, tangy, and with just the right amount of warmth, this chutney is a celebration of seasonal ingredients and balanced flavors from The Farm at Hōkūala.

Ingredients

  • 2 tablespoons salted butter
  • 2 cups sliced red onion
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 cups mango, medium dice
  • 1 thumb-sized piece of ginger, finely grated
  • 1 piece jalapeño, finely diced
  • 1 teaspoon Sichuan pepper
  • 1 teaspoon Chinese five spice
  • 2 cups brown sugar
  • 2 cups rice vinegar

Method

  1. In a pan over medium heat, melt the butter and sauté the red onion with salt and pepper until caramelized—about 15 minutes. This slow cooking process enhances the onion’s natural sweetness, forming the foundation of the chutney’s rich flavor.
  2. Add the mango, ginger, jalapeño, Sichuan pepper, Chinese five spice, brown sugar, and rice vinegar to the pan. Stir well to combine.
  3. Let the mixture simmer, reducing until it thickens by half. The brown sugar and rice vinegar create a luscious glaze, while the warm spices infuse every bite.
  4. Remove from heat, allow to cool, and store in the refrigerator.
